Zigzag Trail
I darted along George Street under the shop canopies to escape the rain, trotting right through the propped door of a warm Italian bakery. Up on a low wooden prep counter, a fluted brass pastry wheel was resting against a bowl of semolina flour. That ridged cutter looked ready for a proper spin! I hopped onto the floured board, gripped the turned-wood handle with both gloves, and leaned all my weight into a forward shove. Roll, roll, roll! The brass disc spun like a dream, stamping a crisp, wavy zigzag track straight through the white dusting. Smooth bearing, zero wobble—completely ready for cutting fresh pasta dough!
